Polynesian Chicken

Total Time: 1 hr Preparation Time: 10 mins Cook Time: 50 mins

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1/2 cup flour
  • 2 lbs chicken pieces (boneless or otherwise)
  • 1 cup orange juice
  • 2 tablespoons brown sugar
  • 2 tablespoons vinegar
  • 1 teaspoon basil
  • 1 teaspoon ground nutmeg
  • 1 1/4 cups sliced peaches

Recipe

  • 1 heat oil at a medium temperature in a skillet large enough for all ingredients.
  • 2 mix the salt, paprika and flour in a pie plate or other shallow dish.
  • 3 coat chicken with flour mixture.
  • 4 add the coated chicken to the pan and brown both sides (about 5 min.).
  • 5 mix the rest of the ingredients except the peaches and add to the pan.
  • 6 simmer covered for 35-40 minute or until chicken is fully cooked.
  • 7 add the peaches and simmer for another 5 minute.
  • 8 enjoy!
