Sausage And Beans

Ingredients
- 1 green bell pepper, chopped
- 1 medium onion, chopped
- 1 garlic clove, minced
- 1 tablespoon vegetable oil
- 1/2 lb fully cooked sausage, cut into 1/4 inch slices
- 4 cups chicken broth, i used a quart of homecanned
- 1 (16 ounce) can black beans, i used 1 pint homecanned
- 1 (16 ounce) can great northern beans, i used 1 pint homecanned
- 5 bay leaves
- 1 teaspoon dried parsley
- 1 teaspoon ground cumin
- 3 -4 dashes hot pepper sauce
- hot cooked rice
Recipe
- 1 in a large skillet, saute bell pepper, onion and garlic on oil until tender.
- 2 add sausage, broth, beans and seasonings.
- 3 cover and simmer for 1 hour, stirring occasionally.
- 4 discard bay leaves.
- 5 serve in bowls over rice.
