Rosemary Sage Lamb Medallions

Ingredients

- cooking spray
- 1 lb lamb tenderloin, cut into 1/2 inch slices
- 1 garlic clove, minced
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon dried sage
- 2 teaspoons lemon juice
- salt and pepper
Recipe
- 1 spray large skillet with cooking spray; heat over medium heat until hot.
- 2 add lamb and garlic and sprinkle with herbs; cook until lamb is browned and no longer pink in the center, 2-3 minutes per side.
- 3 sprinkle with lemon juice. season with salt and pepper and serve.
