Rosemary-crusted Rack Of Lamb

Ingredients
- 2/3 cup breadcrumbs
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon chopped fresh parsley
- 1/4 cup salted butter, melted
- 2 racks of lamb, trimmed
- salt and pepper
- 2 tablespoons dijon mustard, divided
Recipe
- 1 preheat broiler.
- 2 mix bread crumbs, rosemary, parsley and butter. set aside.
- 3 season racks with salt and pepper. place in skillet, meat side up. interlock bones in center of pan. cover bones with foil.
- 4 broil for 8-10 minutes.
- 5 remove pan from oven.
- 6 reduce heat to 325º.
- 7 brush each rack with mustard. spread bread crumb mixture over both racks.
- 8 roast in oven for 20-25 minutes
- 9 remove from oven and let rest 3-5 minutes.
