Short Ribs Contadina

Ingredients

- 2 tablespoons olive oil
- 4 lbs beef short ribs
- 1 onion, coarsely chopped
- 1 (12 ounce) can tomato paste with italian spices
- 2 2/3 cups water
- 1/2 teaspoon salt
- ground pepper
- 2 carrots, peeled and cut into 2 inch pieces
Recipe
- 1 heat oil in large saucepan over medium heat. add ribs; cook until browned on both sides.
- 2 add onion and cook for 1 minute.
- 3 combine tomato paste, water, salt and pepper in small bowl. pour over ribs; cover.
- 4 simmer over low heat for 1 1/2 hours. add carrots; simmer, covered, for additional 30 minutes or until ribs are tender.
