Sausage & Spinach Soup

Ingredients

- 10 ounces sweet italian sausage
- 1 cup chopped onion
- 2 teaspoons minced garlic
- 1/2 cup water
- 1 (15 ounce) can soybeans
- 1 (14 1/2 ounce) can diced petite tomatoes
- 3 (42 ounce) cans chicken broth
- 2 cups chopped baby spinach
- 1 tablespoon chopped fresh basil
- 2 teaspoons chopped fresh oregano
- 2 tablespoons grated romano cheese
Recipe
- 1 remove casings from sausage. cook it in a large sauce pan until browned, stirring to crumble. add the onion and garlic, cook for 2 minutes.
- 2 stir in water, beans, tomatoes, broth. cover and bring to a boil.
- 3 remove from heat, stir in spinach, basil and oregano.
- 4 sprinkle each serving with grated romano cheese.
