Sausage & Spinach Soup

Ingredients

  • Servings: 6
  • 10 ounces sweet italian sausage
  • 1 cup chopped onion
  • 2 teaspoons minced garlic
  • 1/2 cup water
  • 1 (15 ounce) can soybeans
  • 1 (14 1/2 ounce) can diced petite tomatoes
  • 3 (42 ounce) cans chicken broth
  • 2 cups chopped baby spinach
  • 1 tablespoon chopped fresh basil
  • 2 teaspoons chopped fresh oregano
  • 2 tablespoons grated romano cheese

Recipe

  • 1 remove casings from sausage. cook it in a large sauce pan until browned, stirring to crumble. add the onion and garlic, cook for 2 minutes.
  • 2 stir in water, beans, tomatoes, broth. cover and bring to a boil.
  • 3 remove from heat, stir in spinach, basil and oregano.
  • 4 sprinkle each serving with grated romano cheese.
