Seafood Soup

Ingredients

- 1 teaspoon olive oil
- 1 medium onion, diced
- 4 stalks celery, sliced
- 3 medium carrots, diced
- 2 medium potatoes, diced
- 1 (142 g) can baby clams, with juice
- 1 (120 g) can crabmeat, with juice
- 4 cups chicken stock, low fat, low sodium
- 2 cups half-and-half cream
- salt and pepper
Recipe
- 1 1. place veggies in a large pot with olive oil. sautee over medium heat to get the veggies softened a little. (about 5 minutes.).
- 2 2. add clams and crab meat. stir to blend.
- 3 3 add liquids. simmer for about 20 minutes, until veggies are cooked through. serve.
