Sausage & Applesauce Stuffed Acorn Squash

Total Time: 1 hr 40 mins Preparation Time: 10 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 4
  • 2 large acorn squash
  • 1 lb loose sausage meat
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 cups applesauce

Recipe

  • 1 preheat oven to 400 degrees f.
  • 2 cut squash in half, remove pulp and seeds.
  • 3 bake cut side down on greased baking sheet for 30 minutes.
  • 4 shape sausage meat into 12 balls.
  • 5 remove squash from oven. turn over and sprinkle with spices.
  • 6 fill each squash half w/ 1/2 cup applesauce and 3 sausage balls.
  • 7 bake for another hour at 350 degrees f.
