Roast Beef With Dijon Caper Sauce

Ingredients

- 3 lbs beef eye round, trimmed of fat and sinew
- 1/2 teaspoon salt
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1/2 teaspoon fresh ground pepper
- 1 tablespoon vegetable oil
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
- 2 cups low sodium beef broth
- 2 tablespoons dijon mustard
- 2 tablespoons drained capers
Recipe
- 1 sprinkle beef with 1/2 t salt and let stand 1 hour.
- 2 preheat oven to 350 degrees.
- 3 mix thyme, basil, and 1/2 t pepper in small bowl.
- 4 heat oil in skillet and brown beef. sprinkle with herb mixture.
- 5 transfer skillet to oven and roast until 130 degrees, about 40 minutes.
- 6 let rest 20 minutes.
- 7 place skillet with juices over medium high heat.
- 8 add butter and stir until melted.
- 9 gradually whisk in flour and bring to a boil. boil until reduced to 1 1/4 cups, about 6 minutes.
- 10 whisk in mustard and capers.
- 11 adjust seasonings, if necessary.
- 12 cut beef crosswise into very thin slices and serve with sauce.
