Pot Roast, Scandinavian Style

Total Time: 3 hrs 15 mins Preparation Time: 15 mins Cook Time: 3 hrs

Ingredients

  • Servings: 6
  • 4 lbs pot roast
  • 3 tablespoons flour
  • 1 1/2 teaspoons salt
  • 1/8 teaspoon pepper
  • 1/2 teaspoon ginger
  • 2 tablespoons oil
  • 1 cinnamon stick
  • 1/2 cup water
  • 8 ounces dried fruit
  • 1 cup orange juice

Recipe

  • 1 mix first 4 dry ingredients.
  • 2 rub flour mixture over roast.
  • 3 brown roast in oil.
  • 4 discard any remaining oil.
  • 5 add water and cinnamon stick to pot.
  • 6 place fruit on roast.
  • 7 cover tightly; cook at 325 for about 3 hours.
  • 8 during the last 20 minutes add orange juice.
  • 9 roast is done when tender.
