Pot Roast, Scandinavian Style

Ingredients
- Servings: 6
- 4 lbs pot roast
- 3 tablespoons flour
- 1 1/2 teaspoons salt
- 1/8 teaspoon pepper
- 1/2 teaspoon ginger
- 2 tablespoons oil
- 1 cinnamon stick
- 1/2 cup water
- 8 ounces dried fruit
- 1 cup orange juice
Recipe
- 1 mix first 4 dry ingredients.
- 2 rub flour mixture over roast.
- 3 brown roast in oil.
- 4 discard any remaining oil.
- 5 add water and cinnamon stick to pot.
- 6 place fruit on roast.
- 7 cover tightly; cook at 325 for about 3 hours.
- 8 during the last 20 minutes add orange juice.
- 9 roast is done when tender.
