Seafood Soup

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 8
  • 1 teaspoon olive oil
  • 1 medium onion, diced
  • 4 stalks celery, sliced
  • 3 medium carrots, diced
  • 2 medium potatoes, diced
  • 1 (142 g) can baby clams, with juice
  • 1 (120 g) can crabmeat, with juice
  • 4 cups chicken stock, low fat, low sodium
  • 2 cups half-and-half cream
  • salt and pepper

Recipe

  • 1 1. place veggies in a large pot with olive oil. sautee over medium heat to get the veggies softened a little. (about 5 minutes.).
  • 2 2. add clams and crab meat. stir to blend.
  • 3 3 add liquids. simmer for about 20 minutes, until veggies are cooked through. serve.
