Salsa Butter Chicken

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 2
  • 4 1/2 ounces butter
  • 1 tablespoon baby capers
  • 1 tablespoon chopped salted anchovies
  • 2 tablespoons fresh tarragon, leaves and stems
  • 2 teaspoons unwaxed lemon zest
  • 1 tablespoon lemon juice
  • 2 free-range chicken breasts, skin on

Recipe

  • 1 preheat the oven to 350°f
  • 2 mix all the salsa the ingredients together. season with sea salt and freshly ground black pepper.
  • 3 separate the skin of the chicken from the breast - without completely removing it and spread the salsa butter underneath.
  • 4 heat an oven-proof frying pan and brown the chicken on both sides.
  • 5 place in the oven for 8 - 10 minutes until the chicken is cooked through.
  • 6 serve with salad leaves.

Preppy Chicken Fajitas

Ingredients

  • 8 ounces per person boneless skinless chicken breasts, sliced into thin strips
  • 2 green peppers, julienned
  • 1 yellow onion, julienned
  • 1 -2 tablespoon oil
  • 1/2 cup key lime juice (i prefer nellie and joe's famous key west lime juice)
  • 1 pickled jalapeno pepper, seeded and chopped
  • 2 garlic cloves, minced
  • 1/2 cup dried cilantro
  • 1/2 teaspoon black pepper
  • 2 tablespoons cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • salsa (to garnish, i prefer herdez salsa verde)
  • sour cream (to garnish)
  • fajita tortilla

Recipe

  • 1 combine lime juice, jalapeno, garlic, cilantro, pepper, cumin, oregano and salt in a gallon-sized ziploc bag.
  • 2 add in chicken.
  • 3 refrigerate at least 8 hours, mushing the bag occasionally. (i put the bag into a bowl, just in case it leaks, and generally marinade it for 12 hours).
  • 4 saute green peppers and onion in oil until the onions are translucent and the green peppers still slightly crisp.
  • 5 add in marinated meat.
  • 6 cook until meat is done.
  • 7 serve with tortillas, salsa and sour cream.

Salsa Chicken And Rice

Ingredients

  • 1 (10 ounce) enchilada sauce
  • 1 cup converted rice
  • 1 cup thick & chunky salsa
  • 2 (10 3/4 ounce) cans cream of celery soup
  • 1 (15 ounce) can black beans
  • 5 chicken breasts, bone in with skins

Recipe

  • 1 heat oven to 325.
  • 2 spray a 9x13 pan with cooking spray.
  • 3 reserve 2 t. enchilada sauce for brushing on chicken.
  • 4 in large bowl, mix remaining sauce, the uncooked rice, salsa, soup and beans.
  • 5 pour into baking dish.
  • 6 arrange chicken, skin side up, over rice mixture.
  • 7 cover tightly with foil.
  • 8 bake 1 hour.
  • 9 uncover, brush chicken with reserved sauce.
  • 10 bake uncovered 1 hour longer or until chicken is fork tender and juices run clear.

Panhandle Casserole

Ingredients

  • Servings: 6
  • 1 lb hot lean sausage meat
  • 1 lb cheddar cheese, grated
  • 1 1/4 lbs monterey jack cheese, grated
  • 3 (4 ounce) cans green chilies, drained
  • 9 eggs, beaten
  • 1 cup milk
  • 2 tablespoons flour

Recipe

  • 1 brown sausage and drain between paper towels.
  • 2 layer sausage with cheeses and chilies in 9 x 13" glass baking dish.
  • 3 combine eggs, milk and flour until well blended (can do this in a blender). pour liquid over layered mixture.
  • 4 sprinkle with paprika and bake at 350 for 40 to 45 minutes.
  • 5 slice up and serve.

Seafood Seasoning 2

  • 2 tablespoons toasted sesame seeds
  • 2 tablespoons dried dill weed
  • 2 tablespoons paprika
  • 1 tablespoon garlic powder

  • 1 combine all ingredients.
  • 2 store in an airtight container, in a cool dry place.

My Lazy Oven Turkey

Total Time: 2 hrs 25 mins Preparation Time: 10 mins Cook Time: 2 hrs 15 mins

Ingredients

  • Servings: 8
  • 1 whole turkey (8-14 lbs)
  • 1 medium onion
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 teaspoon sage
  • salt & pepper

Recipe

  • 1 remove giblets and neck from turkey; set aside. rinse and drain turkey. pat dry.
  • 2 use a covered roasting pan that just fits the bird.
  • 3 cut onion in half and place inside turkey.
  • 4 blend herbs and make a paste with a little fat. spread on outside of turkey and press into skin.
  • 5 tie legs together.
  • 6 pour 1/2 inch water into pan and cover with lid.
  • 7 place pan in a 350 degree oven for 1 1/2 to 2 hours or until meat thermometer registers 185.
  • 8 uncover for last 10 minutes to brown if desired.
  • 9 remove from oven and let sit for 15 minutes before carving.
  • 10 drain liquid into a pot and return turkey to a warm oven until ready to carve(after standing 15 minutes).

  • 2 tablespoons light cream cheese
  • 3 ounces taco seasoning
  • 1 tablespoon olive oil

  • 1 brown chicken in small amount of oil.
  • 2 take chicken out of pan and add salsa, cream cheese taco seasoning and water stated on taco packet.
  • 3 combine then put chicken back in pan.
  • 4 simmer 10 minutes.
  • 5 serve over rice or in flour tortillas.

  • 1 combine can of rotel and chicken in a medium skillet and let simmer for 15min covered.

Smoky Tomatillo Chicken

  • 15 tomatillos, shucked and coarsely chopped
  • 1 small onion, chopped
  • 2 chipotle chiles in adobo, chopped
  • 3 garlic cloves, chopped
  • 1/4 cup brown sugar
  • 1 cup chicken stock
  • 2 tablespoons dried oregano
  • 4 boneless skinless chicken breasts

Recipe

  • 1 mix all ingredients except chicken in the slow cooker.
  • 2 add chicken and make sure it is covered with the tomatillo mixture.
  • 3 cover and cook on low for 5-7 hours.
  • 4 serve over rice or with warm tortillas, spooning extra sauce from cooker over the top.

Pomegranate Glazed Cornish Game Hens

  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon thyme

  • 1 preheat oven to 375 deress season game hens with salt,pepper and thyme cook on rack for 1 hr.

Restaurant Plaisir/sante Poulet A La Tunisienne

Ingredients

  • Servings: 4
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1/2 cup shallot, minced
  • 1 1/2 lbs chicken thighs or 1 1/2 lbs boneless skinless chicken breasts
  • 1 (15 ounce) can apricots (prefer in juice instead of in syrup)
  • 3/4 teaspoon cinnamon
  • 2 tablespoons creme fraiche
  • salt & freshly ground black pepper
  • couscous, for serving

Recipe

  • 1 if using chicken breasts, cut them into 1 inch cubes. set aside.
  • 2 heat a large, heavy saucepan over medium heat. add the shallots and saute until softened, 3 to 4 minutes.
  • 3 add the chicken and cook until the skin is browned on all sides or the breast meat is golden. stir in the apricots and their juice as well as the cinnamon.
  • 4 cover, reduce heat to low and cook for 20 minutes.
  • 5 remove cover, increase the heat to medium-high and allow cooking liquid to reduce slightly, about 10-12 minutes.
  • 6 before serving, stir in the creme fraiche and season to taste. serve over couscous.

Pomegranate Cilantro Meaty Sauce Three Layer Casserole #sp5

  • 2 eggplants
  • 4 yellow plantains
  • 1 (24 ounce) package simply potatoes traditional mashed potatoes
  • 1 lb ground meat
  • 1/4 cup tomato paste
  • 1/4 cup pomegranate juice
  • 1/4 red onion
  • 1/4 cup cilantro
  • 1/4 red pepper
  • 1/4 garlic
  • 1 tablespoon salt
  • 1 tablespoon ground black pepper
  • 1 (8 ounce) package shredded cheddar cheese

  • 1 take the skin off the eggplant and cut it in four big halves.
  • 2 take the skin off the yellow plantain and cut it in half.
  • 3 2 pots for each vegetable with 4 cups of boiling water bring the eggplant, and yellow plantain in separate pots, let it boil until both vegetable are tender.
  • 4 meanwhile preheat oven to 350 degrees for 10 minutes.
  • 5 defrost the simply mashed potatoes package in the microwave.
  • 6 in a 13 by 9, 2 inch baking dish grease the baking dish with fat free butter.
  • 7 bring red onion, cilantro, red pepper, garlic, together processed all this vegetables in the food processor. then combine all vegetables with the ground meat, tomato paste, pomegranate juice, salt and ground black pepper, until meat is well done.
  • 8 once both vegetables are tender you mashed the yellow plantain.
  • 9 you don't need to mashed the eggplant leave it as it is.
  • 10 first layer will be the mashed yellow plantain spread evenly in the baking dish. then add the ground meat evenly to cover the yellow plantain, and some shredded cheddar cheese.
  • 11 second layer will the eggplant spread it evenly on top of the yellow plantain. then spread all that's left of the ground meat and then add some shredded cheddar cheese.
  • 12 third layer will be the simply mashed potatoes which it will be the top layer. spread it evenly on top of the eggplant and add all that its left of the shredded cheddar cheese on it.
  • 13 turn on the oven to 350 degrees on baking option.
  • 14 put the casserole dish in the oven for 30 minutes.
  • 15 once its done let it stand for 5 minutes to cool down.
  • 16 can be serve with your favorite salad.

  • 1/2 cup mayonnaise or 1/2 cup miracle whip
  • 1/4 cup zesty italian salad dressing
  • 2 tablespoons grated parmesan cheese
  • 2 cups green peas or 2 cups black-eyed peas, rinsed
  • 8 ounces corkscrew macaroni, cooked, rinsed and drained
  • 1 1/2 cups chopped imitation crabmeat (about 8 oz)
  • 1 cup broccoli floret, partially cooked

  • 1 combine mayo, italian dressing and cheese in large bowl; blend well.

  • 1 (16 ounce) package smoked link sausage, cut into 1-inch pieces

  • 1 in a large skillet, saute sausage, celery and onion in butter until vegetables are tender.
  • 2 stir in water, milk and content of sauce mix from potatoes; bring to a boil.
  • 3 stir in potatoes. reduce heat, cover and simmer for 20-25 minutes or until potatoes are tender, stirring once. sauce will thicken after standing.

Honey Dijon Marinade

  • 2 tablespoons balsamic vinegar
  • 2 tablespoons dijon mustard
  • 1 tablespoon honey
  • 1/2 teaspoon tabasco sauce

Recipe

  • 1 combine all of the ingredients in a medium bowl and blend well.
  • 2 select the meat/vegetables you wish to marinate.
  • 3 prep into appropriate sized pieces for grilling.
  • 4 add to the marinade.
  • 5 cover, and marinate for one hour. remove from the marinade, and finish on the grill.

Mc Donald's Big Mac.....almost!!!!!

Ingredients

  • 8 hamburger buns with sesame seeds
  • 1 lb hamburger, in 8 thin patties, 1/10 lb each (approximately)
  • 8 slices pickles
  • finely chopped onion (at mcd's these are reconstituted)
  • shredded iceberg lettuce
  • salt and pepper
  • 4 slices yellow american cheese
  • 1/4 cup mayonnaise
  • 2 tablespoons catsup
  • 1 tablespoon mustard
  • 1 tablespoon sweet pickle relish

  • 1 make the sauce: mix the sauce ingredients together until you get kind of a light orange colored sauce.
  • 2 add more or less mayo according to taste.
  • 3 adjust the recipe for more sauce if desired.
  • 4 take four of the buns and remove the tops.
  • 5 save the tops for another recipe.
  • 6 toast the buns and start to cook the meat.
  • 7 a foreman grill is most like the grill used at mcdonald's, but you can do it any other way you want.
  • 8 (you can cook the meat and put aside until your buns are ready, or work quickly and finish simultaneously) spread out the bun bottoms (you will have 8) on a baking sheet.
  • 9 put sauce on all of these (the closer 4 will be the middle layer).
  • 10 sprinkle buns with minced onions (we used a good pinch).
  • 11 follow the onions with the shredded lettuce.
  • 12 for the four closest buns, top each with 2 pickles and for the four farthest top each with a slice of cheese.
  • 13 if you are a truly skilled big mac maker your buns will be ready as soon as your meat is ready, but it takes practice.
  • 14 put the 8 pieces of meat onto all of the 8 buns.
  • 15 take the four pickle side buns and move on top of the cheese side buns.
  • 16 top with the bun"lids" and enjoy your big mac's!

Salsa Chicken Slow Cooker Recipe

Ingredients

  • 3 -4 chicken breasts
  • 1 (8 ounce) packet taco seasoning
  • 2 cups salsa

Recipe

  • 1 -lightly spray the inside of the slow cooker with pam.
  • 2 -place the chicken breasts in the slow cooker
  • 3 -cover the chicken with the packet of taco seasoning.
  • 4 -pour the salsa on top, and smooth it out so it covers everything.
  • 5 -cover and cook 8 hours on low.
  • 6 ***be sure not to remove the lid at anytime, as if you do you will need to add 30 mins to cooking time. (not worth it :) )***.
  • 7 -when chicken is done, take 2 forks and shred the chicken and the salsa will absorb into it (also the salsa will not taste like salsa anymore, it reduces to more of a juicy sauce instead of chunky).
  • 8 -serve anyway you'd like :) with rice, with tortilla chips, in a torpedo roll, or any other way you can think of!. its delicious all ways!

Salsa Chicken Burrito Filling

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 (4 ounce) boneless skinless chicken breast halves
  • 1 (4 ounce) can tomato sauce
  • 1/4 cup salsa
  • 1 (1 1/4 ounce) package taco seasoning mix
  • 1 teaspoon ground cumin
  • 2 garlic cloves, minced
  • 1 teaspoon chili powder
  • hot sauce

Recipe

  • 1 1 place chicken breasts and tomato sauce in a medium saucepan over medium high heat. bring to a boil, then add the salsa, seasoning, cumin, garlic and chili powder. let simmer for 15 minutes.
  • 2 2 with a fork, start pulling the chicken meat apart into thin strings. keep cooking pulled chicken meat and sauce, covered, for another 5 to 10 minutes. add hot sauce to taste and stir together (note: you may need to add a bit of water if the mixture is cooked too high and gets too thick.).

  • 1/2 green pepper, finely chopped
  • 1/2 cup onion, finely chopped

  • 1/4 cup salsa, mild

  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 lb lean ground chicken (or turkey)
  • 1 teaspoon vegetable oil (for frying burgers, can be omitted if you have a good pan)

Salsa Beef

Ingredients

  • Servings: 4
  • 1 (2 -3 lb) boneless beef shoulder or 1 (2 lb) rump roast (i used chuck)
  • 1 tablespoon oil
  • 1 cup mild salsa
  • 2 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon fresh minced garlic
  • 3 tablespoons chopped cilantro leaves
  • 1 tablespoon lime juice

Recipe

  • 1 trim fat from beef and cut into bite-size cubes.
  • 2 heat oil in a large dutch oven and brown meat in batches.
  • 3 pour off drippings.
  • 4 add salsa, brown sugar, soy sauce and garlic.
  • 5 bring to a boil, then reduce heat to low.
  • 6 cover and simmer 1 hour or longer.
  • 7 remove lid and continue cooking for an additional 30 minutes.
  • 8 remove beef from heat and add cilantro and lime juice.

Salsa And Poblano Chicken

Ingredients

  • Servings: 4
  • 8 chicken thighs
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground pepper
  • 3 large poblano chiles, cut into thin strips
  • 3/4 cup prepared salsa (mild or medium)
  • 1/4 cup water
  • cooked rice

Recipe

  • 1 heat oven to 350 degrees.
  • 2 sprinkle chicken with salt and pepper.
  • 3 heat large skillet for 3 minutes over medium-high heat.
  • 4 add 4 chicken thigh skin side down.
  • 5 cook 2 minutes per side.
  • 6 transfer to paper towel.
  • 7 repeat with remaining chicken.
  • 8 remove all but 1 tsp drippings from skillet.
  • 9 add chilies and cook 4-5 minutes over medium-high heat, stirring until tender.
  • 10 return chicken to skillet, stir in salsa and water.
  • 11 bake 40-45 minutes until chicken is cooked through.
  • 12 serve with rice.

Pregnant Burritos

Total Time: 16 mins Preparation Time: 15 mins Cook Time: 1 min

Ingredients

  • 1 flour tortilla (per person)
  • 1/4 cup refried beans, warmed
  • 1/4 cup seasoned taco meat, warmed
  • 1/4 cup sharp cheddar cheese, shredded
  • 5 -6 black olives, sliced
  • 2 -3 tablespoons sour cream
  • 1 -2 green onion, sliced
  • 1/4 cup chopped tomato, deseeded
  • 1/4 cup lettuce, thinly sliced (or coarsely shredded)
  • taco sauce (heat-ness is up to you)

Recipe

  • 1 warm the burrito skin (optional); lay it on a microwave-safe serving plate.
  • 2 spread beans down the center third of the burrito; top with taco meat, cheese, olives, sour cream, onions and tomato.
  • 3 pop this into the microwave and cook until cheese begins to melt and bubble up (1 minute on high)--watch carefully.

  • 1 cup honey

Recipe

  • 1 whisk together honey and soy sauce, stirring in the garlic and ginger until blended (honey may settle to the bottom, no worries.).
  • 2 pour over thighs in a 9x13 pan, or if you prefer meat, chicken breast tenders and marinate, one hour for lighter flavour, more for a stronger flavour.
  • 3 pop into a preheated oven at 400f for 20 minutes, flipping over halfway and continuing for another 20 minutes. (you can choose to leave some marinade in the pan while cooking, i liked using it for dipping afterwards.).
  • 4 cooking times are approximate, so make sure you use a thermometer!
  • 5 serve with brown rice, and california blend veggies.

Salsa Chicken

  • 4 -6 chicken breasts (depending how many your serving for)
  • 1/4-1/2 cup bottled low-fat italian salad dressing (enough for sauting, i usually use approx 1/4 to 1/2 of a cup)
  • 1 jar salsa (your choice of med-mild-or hot)
  • 1/4 cup grated cheddar cheese (aprox more or less depends on your tastes)
  • cumin

Recipe

  • 1 saute the chicken breasts in the dressing and adding cumin to both sides, until a"few" minutes from being cooked.
  • 2 (20-25 min) add the salsa on top of the chicken and the cheese and simmer only long enough to melt the cheese and serve.

Orange Carrot Salad

  • 4 boneless skinless chicken breast halves (about 6 ounces each) or 6 chicken thighs

  • 1/4 teaspoon black pepper
  • 2 teaspoons instant minced garlic
  • 1 (6 ounce) can tomato paste
  • 2 tablespoons smoked paprika, more to taste
  • 1 cup regular sour cream (do not substitute lowfat or fat-free)

Recipe

  • 1 bring 2 cups of lightly salted water to a boil.
  • 2 add the rice, reduce the heat to low, and cook 17 minutes or until tender.
  • 3 cut the chicken into bite-size pieces and set aside.
  • 4 heat the oil in a large, deep over medium-high heat.
  • 5 peel and thinly slice the onion into rings, adding them to the skillet as you slice.
  • 6 add chicken, salt and pepper.
  • 7 cook, stirring often, for 4 to 5 minutes, until the chicken is cooked through.
  • 8 remove the chicken and most of the onions to a platter and set aside.
  • 9 add the garlic, tomato paste, paprika and 1 cup water to the skillet; stir well until blended.

  • 1 teaspoon dried oregano
  • 1 1/4 cups uncooked long grain rice
  • 1 (14 ounce) can reduced-sodium chicken broth
  • 1 cup frozen and thawed corn kernel
  • 1 cup thicky and chunky salsa

  • 1 heat the oven to 350.
  • 2 season the chicken with the salt and pepper.
  • 3 heat the olive oil in a big skillet over medium heat.
  • 4 add the chicken turning once cook for 2 to 3 minutes on each side (it will not be done through).
  • 5 transfer the chicken breasts to a plate and cover to keep warm.
  • 6 add the garlic, onion, cumin and oregano to the same skillet and stir to cook softening the onion.
  • 7 add in the rice and stir till the rice is opaque. (2 minutes?).
  • 8 stir in the broth, corn and salsa and bring to a boil.
  • 9 transfer the rice mixture to a 3 quart casserole and cover and bake it for 30 minutes.
  • 10 remove the cover and tuck in the chicken breasts along eith any accumulated juices.
  • 11 cover again and bake for 15 more minutes until the liquid is absorbed.

Simply Delicious Roasted Chicken

  • 3 preheat oven to 425 degrees f.
  • 4 spray large shallow baking sheet with cooking spray and arrange chicken so it is not crowded on the pan with skin side up.

Roasted Garlic Chicken With Caramelized Onions

Total Time: 50 mins Preparation Time: 5 mins Cook Time: 45 mins

Ingredients

  • 2 boneless skinless chicken breasts
  • 2 teaspoons dried thyme
  • 2 tablespoons olive oil
  • 1 head garlic
  • 2 medium onions, thinly sliced
  • 1 tablespoon butter
  • 1 1/2 cups chicken broth
  • 1/2 cup wine (optional)
  • salt and pepper

Recipe

  • 1 preheat oven to 400 degrees. slice the top off the head of garlic, place on a piece of foil, sprinkle with salt, and drizzle olive oil over top. roast about 30 minutes. once cool enough to handle, squeeze the garlic into a small bowl and mash with a spoon into a paste.
  • 2 melt the butter in a pan and saute the onions over medium heat for about 45 minutes. you want the onions to caramelize in their own sugars and take on a nice golden brown color. this may take up to an hour, depending on how dialed your heat is. if they turn black, it was too hot!
  • 3 season the chicken breasts with salt, pepper, and thyme on both sides. saute in olive oil over medium-high heat for about 2-3 minutes per side. you only want a nice golden crust here.
  • 4 spread the roasted garlic paste over top of the chicken breasts and finish them in the 400 degree oven for about 10 minutes or until the juices run clear. let the chicken rest on your cutting board for 5 minutes while you prepare the sauce from the pan drippings.
  • 5 drain the excess olive oil from the pan and place over high heat. deglaze with chicken broth and the optional wine, scraping the browned bits off the pan with a wooden spoon. you want to boil this rapidly and reduce it down to about a third of what it was (or until it's a nice sauce consistency). taste and correct the seasoning with salt and pepper.
  • 6 to plate, slice the breasts diagonally, lay the slices one atop the next, drizzle with the sauce, and top with the carmelized onions.

Quick Bbq Chicken Legs - Homemade Bbq Sauce

  • 4 chicken legs, whole fresh glatt kosher optional (this also works great with using a whole chicken - 8 piece cut up but double the bbq sauce amounts)
  • 1 cup ketchup, organic
  • 1 teaspoon liquid smoke flavoring
  • 1/4 cup dark molasses
  • 1/4 cup water, warm
  • 1 teaspoon hot sauce (optional)

Recipe

  • 1 wash chicken thoroughly and place in a large microwavable casserole dish.
  • 2 place molasses and warm water into a 2c microwave safe measuring cup or bowl and microwave for 30 seconds to allow molasses to mix easily.
  • 3 add ketchup and smoke flavor and mix thoroughly. if you like a kick add hot sauce.
  • 4 pour bbq sauce mix over chicken evenly.
  • 5 place chicken with cover into microwave oven and set on high for 15 minutes.
  • 6 open casserole and re-arrange chicken, nuke for another 15-20 minutes making sure chicken is cooked to the bone upon removal - times may vary depending on wattage of oven.
  • 7 remove casserole dish, uncover and broil in oven for 5 minutes to brown skin. watch carefully not to overcook.
  • 8 suggest serving with parve baked potato/sour cream recipe.

Simply Easy Stroganoff

  • Servings: 6
  • 1 lb chicken breast, cut into 1/4 inch chunks
  • 4 tablespoons flour (1 tbsp to coat meat, 3 tbsp for sauce)
  • 4 tablespoons butter (divide in half) or 4 tablespoons margarine (divide in half)
  • 3 ounces canned mushrooms, sliced (or 6 oz fresh mushrooms)
  • 1/2 medium onion, chopped
  • 1 garlic clove, minced

  • 1 preheat the oven to 450 degrees.
  • 2 make the beef filling. heat a large pot over medium-high heat. season the beef sirloin with salt and pepper and then coat with the flour. add the butter and oil to the hot pan. once the butter has melted, brown the meat on all sides. remove the beef with a slotted spoon, and set aside. deglaze the pan with the wine, scraping up the brown bits from the bottom. bring the wine to a boil and cook for 1 minute. pour in the beef broth and worcestershire sauce. add the browned beef, potatoes, carrots, peas, and corn to the pot. season with parsley, sugar, garlic powder, onion salt, pepper and bay leaf. bring the mixture to a boil. turn the heat down to low. cover and cook for 20 minutes, or until the beef is cooked through and the vegetables are soft. remove the bay leaf. stir in the mixture of 2 tbsp of flour + 2 tbsp water.
  • 3 assemble the pie. lightly grease the bottom and sides of a pie plate. press one of the pie crusts in the bottom of the pie plate. carefully pour the beef mixture into the pie crust. cover with the second pie crust. make slits in the top of the pie crust.
  • 4 bake in a preheated oven according to pie crust baking instructions, or until the pie crust is golden brown. cover the edges of the pie crust about 15 to 20 minutes after baking, so they don't burn.
  • 5 there's no need to allow the pie to sit - you can slice it immediately. be careful - it's hot! my husband likes to drizzle a little brown gravy on top of his.

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 in large bowl mix potatoes and stuffing mix (if seasoning pack and bread is packaged separate, mix both together).
  • 3 pound chicken breast to about 1/4 inch thick.
  • 4 at this point you can cut your chicken to make 12 smaller rolls or leave whole and make 6 larger ones.
  • 5 season chicken with bouillon, (use like you would salt).
  • 6 spoon about 1/2 cup mixture onto edge of each chicken breast and roll, securing with tooth picks.
  • 7 season outside with bouillon.
  • 8 bake on nonstick baking sheet for 30 to 40 minutes, depending on size.

  • 1 tablespoon butter

  • 1 tablespoon vinegar
  • 2 tablespoons cornstarch
  • 3 tablespoons sherry wine or 3 tablespoons water
  • 1 teaspoon sesame seeds (optional for garnish)

Recipe

  • 1 1. place roast in dish with cover.
  • 2 2. brown sesame seeds in butter about 1 min over medium heat.
  • 3 3. add coffee, soy sauce, worcestershire sauce, and vinegar. heat to boiling.
  • 4 4. pour hot marinade over roast. marinate 8 hours or overnight, covered.
  • 5 5. remove roast from marinade. brown on all sides over medium high heat. heat marinade to boiling. place roast in roasting pan with lid, pour marinade over and cover. bake at 325 deg f for 2 to 2 1/2 hours. may also be placed in a crock pot and cooked on low for 8 to 10 hours or on high for 4 to 5 hours.

  • 4 medium potatoes, chopped into large pieces
  • 1 large carrot, chopped into large pieces

Recipe

  • 1 heat your oil in a large pot, then fry the onion until partly translucent.
  • 2 add the garlic, ginger and curry powder and fry for about a minute for the spices and aromatics to release their flavor.
  • 3 add chicken, 2 cups of water and 2 cups of coconut milk. bring to a boil then lower to a simmer and cover. simmer for 20 minutes or until very soft.
  • 4 add vegetables and bring to a boil again. turn down heat and cover again. simmer for 20 minutes or until soft.
  • 5 mix the 6 tb flour with the 6 tb water until it's smooth (and an extra tablespoon or so of curry if you like). then add this slurry straight into the pot. turn the heat up to medium and stir until thickened.

  • 1 heat 3 inches oil to 365°f in deep fryer or deep saucepan. place one tortilla in oil. let float 5 seconds. press center of tortilla into oil with metal ladle to form bowl. holding ladle in place, fry 1 to 2 minutes, or until lightly golden brown. drain on paper towel. repeat with remaining tortillas.
  • 2 in a large nonstick skillet over medium heat, cook the ground beef or turkey, onion and garlic in oil until meat is no longer pink. stir in the chili powder, cumin, salsa, salt and pepper; cook over medium heat an additional 5 minutes. remove from the heat; stir in cilantro.

  • 1 remove membrane from back of ribs. in a small bowl, combine dry rub ingredients and mix well. set aside 1 tbsp of the rub for liquid seasoning mixture and apply remaining rub generously to front and back of ribs. pat gently to ensure that rub adheres to meat.
  • 2 build a fire (a combination of charcoal and wood) for indirect cooking by situating the coals on only one side of the grill, leaving the other side void. when coals register 250 degrees , place slabs meat side up on grill over empty space. close the cover, and cook with indirect heat for 21/2 hours, adding coals as needed to maintain 250 degrees .
  • 3 cut 2 pieces of foil large enough to wrap each slab of ribs completely and stack them to create a double layer. remove ribs from grill. place each slab, meat side down, on a doubled foil square.
  • 4 in a small bowl, combine liquid seasoning ingredients, including reserved tbsp dry rub. pour 1/2 cup of the liquid over each slab, then tightly wrap and seal foil. place wrapped slabs back on grill, close the lid and cook over indirect heat for 1 hour.
  • 5 remove ribs from grill, unwrap and discard foil and liquid. brush barbecue sauce on both sides of ribs. return ribs to grill for 15 minutes or until sauce caramelizes. remove ribs from grill, cut and serve with additional sauce, if desired.

  • 13 sprinkle with remaining 1 1/4 cups of mozzarella cheese and 1/4 cup parmesan cheese.

  • 16 remove foil and bake an additional 15 minute or until bubbling.

Salpicao---brazilian Chicken Salad
