Sloppy Dogs

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 8
  • 1 tablespoon vegetable oil
  • 1/2 cup chopped green bell pepper
  • 1/3 cup chopped onion
  • 1/2 cup barbecue sauce
  • 1 cup ketchup
  • 1/2 teaspoon mustard
  • 1/2 teaspoon garlic powder
  • 1 lb hot dog, diced
  • 8 hot dog buns or 8 hamburger buns

Recipe

  • 1 heat oil in 10-inch skillet over medium heat. cook bell pepper and onion in oil, stirring occasionally, until onion is tender.
  • 2 stir in barbecue sauce, ketchup, mustard, garlic powder and hot dogs. simmer uncovered 10-12 minutes, stirring occasionally.
  • 3 fill buns with the hot dog mixture.

Roast Beef Tenderloin With Red Wine & Shallot Sauce

Ingredients

  • 4 lbs beef tenderloin, premium oven roast
  • 3 tablespoons black peppercorns, coarsely crushed
  • 1 teaspoon salt
  • 3 tablespoons olive oil
  • 4 tablespoons butter
  • 2 cups diced shallots
  • 1 teaspoon sugar
  • 3 garlic cloves, minced
  • 1 tablespoon minced fresh thyme
  • 3 1/4 cups beef stock
  • 1/2 cup dry red wine
  • 1/4 cup brandy
  • 1 bay leaf
  • 2 tablespoons cornstarch

Recipe

  • 1 sprinkle beef with peppercorns & salt, pressing to adhere.
  • 2 heat oil in roasting pan, over medium-high heat; sear beef all over.
  • 3 roast in preheated 375f oven for about 55 minutes or until meat thermometer inserted in centre registers 140f (for medium-rare); transfer to cutting board, tent with foil & let stand for 15 minutes before carving.
  • 4 sauce: heat 2 tbsp pf the butter in a saucepan over medium heat; cook shallots, stirring occasionally, for about 10 minutes or until softened.
  • 5 stir in sugar & cook for an additional 10 minutes or until shallots are golden & caramelized; stir in garlic & thyme and cook for a further 5 minutes.
  • 6 add stock, wine, brandy & bay leaf, bring to a boil, then reduce heat and simmer for about 30 minutes or until sauce is reduced to about 2 cups.
  • 7 whisk cornstarch with 1 tbsp water, then whisk into sauce and boil until smooth & thickened; discard bay leaf.
  • 8 add roasting pan juices to sauce, bring to a boil, then whisk in remaining butter; serve with roast.

Rosemary Tomato Chicken With Rice

Total Time: 45 mins Preparation Time: 5 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 4 skinless chicken breasts
  • 2 teaspoons rosemary
  • 1 teaspoon kosher salt
  • 1 teaspoon fresh ground black pepper
  • 1 (28 ounce) can stewed tomatoes (i use dei fratelli brand)
  • 2 tablespoons extra virgin olive oil
  • 2 cups basmati rice (i use lundberg organic)

Recipe

  • 1 preheat the oven to 375 degrees.
  • 2 wash and tenderize the chicken and set aside.
  • 3 place the olive oil, and half the rosemary, salt and pepper in a bowl or deep plate. note: depending on the freshness of your rosemary, you may want to modify the amount to more or less. fresh rosemary can come out very strong in this recipe, so use discretion.
  • 4 dip each chicken breast into the olive oil mixture and place in a baking pan. give it an extra couple sprinkles of the salt, pepper and rosemary.
  • 5 add the stewed tomatoes into the baking pan. pour the remains of the olive oil mixture, plus any leftover rosemary, salt and pepper on top.
  • 6 cover the pan with aluminum foil and bake for 20 minutes.
  • 7 at 20 minutes, remove the cover and flip the chicken breasts. bake uncovered another 20 minutes, for a total of 40 minutes.
  • 8 serve over the rice and enjoy!

Potato And Meat

Ingredients

  • Servings: 4
  • 1 lb cubed meat
  • 1/2 cup oil
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1/4 teaspoon ground pepper
  • 1 onion
  • 3 garlic cloves
  • 1 cup tomato sauce
  • 2 cups water
  • 1 lb potato, peleed and cubed

Recipe

  • 1 brown the meat in the oil.
  • 2 add the salt paprika onion garlic and cook for 3 min.
  • 3 add tomato sauce, cook for another 5 min.
  • 4 add water and when meat is tender add potato.
  • 5 keep cooking until the meat and potatoes are tender.

Rosemary Turkey With Mushrooms

Ingredients

  • Servings: 3
  • 1 lb turkey breast tenderloin, slices all visible fat removed
  • 1/2 cup low sodium chicken broth
  • 1 tablespoon cornstarch
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • vegetable oil cooking spray
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon snipped fresh rosemary or 1/4 teaspoon dried rosemary, crushed
  • 8 ounces chanterelle mushrooms or 8 ounces button mushrooms, cleaned, trimmed and sliced
  • 1/4 cup chopped shallots or 1/4 cup onion

Recipe

  • 1 rinse turkey and pat dry. set aside.
  • 2 in a small bowl, stir together broth, cornstarch, salt and pepper. set aside.
  • 3 spray a large skillet with vegetable oil. place over medium-high heat. add half the turkey to hot skillet. cook about 2 minutes on each side, or until turkey is tender.
  • 4 and no longer pink. repeat with remaining turkey.
  • 5 remove skillet from heat; remove turkey from skillet and keep warm. add vinegar and rosemary to skillet, stirring to scrape up brown bits from bottom of pan.
  • 6 return skillet to heat and add mushrooms and shallots or onion. over medium heat, cook and stir until mushrooms are tender, about 5 minutes. stir broth mixture and.

  • 3 lbs beef stew meat
  • 1/2 cup italian salad dressing
  • 2 cups water
  • 2 teaspoons beef bouillon granules
  • 1 (14 1/2 ounce) can crushed tomatoes (with juice)
  • 1 (10 1/2 ounce) can beef broth
  • 1 (8 ounce) can tomato sauce
  • 1 garlic clove
  • 1 bay leaf
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 6 medium potatoes (cut into chunks)
  • 2 cups mini peeled carrots
  • 1 medium green pepper (cut into chunks)
  • 1 small onion, chopped
  • 4 tablespoons flour
  • 4 tablespoons cold water

Recipe

  • 1 in a big pot or dutch oven, brown meat in salad dressing. add the next 9 ingredients and bring to a boil. reduce heat and simmer for 1-2 hours or till meat is tender.
  • 2 add the potatoes, carrots, pepper and onion.
  • 3 cover and simmer another hour or until veggies are tender. combine flour and cold water in a shaker, stir into stew and bring to a boil till thickened. serve.

  • 1 the broth will be tastier if you brown meat slowly on all sides before simmering.

  • 2 1/2-3 lbs boneless beef short ribs
  • 2 large onions, cut into thin wedges
  • 1 cup thinly sliced carrot (2 medium)
  • 1 medium fennel bulb, cored and cut into thin wedges
  • 1 (14 1/2 ounce) can diced tomatoes, undrained
  • 1 cup dry red wine
  • 2 tablespoons quick-cooking tapioca, crushed
  • 2 tablespoons tomato paste
  • 1 teaspoon dried rosemary, crushed
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 4 garlic cloves, minced
  • 2 1/2 cups water
  • 1 cup coarse-ground yellow cornmeal
  • 1 cup cold water

  • 1 trim fat from meat. in a 5- or 6-quart slow cooker combine onions, carrots, and fennel. top with meat.
  • 2 in a small bowl combine undrained tomatoes, wine, tapioca, tomato paste, dried rosemary, salt, pepper, and garlic. pour over meat and vegetables.

Short Ribs With Curried Peanut Sauce

  • 3 lbs short rib of beef (butterflied or just cut them in half)
  • 1/2 cup soy sauce
  • 1/4 cup olive oil
  • 1/4 cup beef stock
  • 1/4 cup liquid honey
  • 6 tablespoons toasted sesame seeds
  • 3 tablespoons peanut butter
  • 2 tablespoons curry powder
  • 2 tablespoons black pepper
  • 6 garlic cloves, minced
  • 2 tablespoons green onions, ends only minced
  • 1 tablespoon fresh ginger, grated

Recipe

  • 1 in a bowl whisk together all ingredients except the ribs.
  • 2 place ribs in a ziplock bag pour 2/3 of the marinade over them and reserve the remainder.
  • 3 marinade in fridge over night.
  • 4 for the bbq: dry the ribs with a paper towel and put them on the grill of a preheated bbq on medium heat for 35 to 40 minutes.
  • 5 turn and baste often with reserved marinade.
  • 6 then raise the heat and grill until the ribs are slightly charred.

  • 2 lbs boneless beef short ribs
  • 4 teaspoons emeril's original essence (i used emeril lagasse's essence emeril lagasse's essence)
  • 1/2 teaspoon black pepper, fresh ground
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 1 green bell pepper, chopped
  • 3 large garlic cloves, minced
  • 2 (14 1/2 ounce) cans diced tomatoes
  • 3 cups beef stock, divided
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 1/2 cups long grain brown rice
  • 8 green onions, thinly sliced
  • 1/4 cup fresh parsley, chopped

Recipe

  • 1 heat oven to 350 degrees.
  • 2 cut ribs into 2-inch pieces. in a small bowl mix together the creole seasoning and black pepper. sprinkle over the meat and gently rub inches.
  • 3 over medium-high heat, heat oil in heavy dutch oven and add ribs in small batches; cooking 3 to 4 minutes or until browned, turning once. remove and place on plate.

Short Ribs Provencal

Total Time: 13 hrs Preparation Time: 10 hrs Cook Time: 3 hrs

Ingredients

  • Servings: 6
  • 6 tablespoons extra virgin olive oil
  • 2 cups dry red wine
  • 2 onions, in 1-inch chunks
  • 3 carrots, peeled, in 2-inch lengths
  • 4 garlic cloves, crushed
  • 6 sprigs fresh thyme
  • 1 blood oranges or 1 regular juice orange
  • salt & fresh ground pepper
  • 4 lbs beef short ribs, in 2-inch chunks
  • 1 teaspoon dried herbes de provence
  • 1 tablespoon sun-dried tomato pesto or 1 tablespoon tomato paste

Recipe

  • 1 in a large bowl, combine 4 tablespoons olive oil, the wine, onions, carrots, garlic and thyme. use a vegetable peeler to cut 3 3-inch strips of orange peel and add them, along with juice of orange. season with salt and pepper. add short ribs, cover and refrigerate overnight.
  • 2 the next day, remove meat from marinade and pat dry on paper towels. strain marinade into a large measuring cup. reserve vegetables.
  • 3 heat remaining oil in a 4-quart casserole. add meat, a few pieces at a time, and lightly brown. remove to a bowl.
  • 4 add reserved onions and garlic to casserole, lower heat and cook until starting to brown. add herbes de provence. return meat to casserole with reserved thyme, carrots and orange peel. pour in 11/4 cups marinade. bring to a simmer, season with salt and pepper, lower heat, cover and cook 3 hours. moisten with more marinade if needed.
  • 5 skim excess fat from surface, check seasoning, stir in tomato pesto or paste and serve from casserole.

Rosemary-apricot Chicken

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 1 teaspoon salt
  • 1 teaspoon dried rosemary, crumbled
  • 1/2 teaspoon black pepper
  • 2 crushed garlic cloves
  • 6 skinless chicken quarters
  • 1/4 cup apricot jam
  • 1 tablespoon squeezed lemon juice
  • 1 teaspoon dijon mustard

Recipe

  • 1 heat oven to 350°. mix salt, rosemary, pepper and garlic. rub mixture into chicken.
  • 2 place chicken, meaty side up, in pan and bake for 25 minutes.
  • 3 meanwhile, mix apricot jam, lemon juice, and mustard. brush apricot mixture over chicken. bake for 20 minutes longer or until juices run clear.
  • 4 serve.

Sloppy Joe Bake

Ingredients

  • 1 lb ground beef
  • 1 cup onion, chopped
  • 1 (15 1/2 ounce) can sloppy joe sandwich sauce
  • 1 (11 ounce) can mexican-style corn, drained
  • 1 cup baking mix, such as bisquick
  • 3/4 cup shredded cheddar cheese
  • 1/3 cup water

Recipe

  • 1 pre heat over to 425°f coat 1 1/2 baking dish with cooking spray. in a large non stick skillet, cook boof and onion over med heat until beef is brown and onion is tender, 5 minutes. drain excess fat. stir in sloppy joe sauce; cook until heated through;remove from heat. reserve 1/3 cup mexi corn;stir remaining into beef mixture;transfer to baking dish. stir baking mix, 1/2 c cheese, and 1/3 c water, into reserved mexi corn;dollop spoonfuls over beef mixture.
  • 2 bake 15 - 20 minutes or until biscuits are golden, sprinkling with remaining 1/4 c cheese during last 2 minutes of cooking. cool 10 minutes. if desired, sprinkle with 1 scallion, sliced.
  • 3 serves 6.

Rosemary Sage Lamb Medallions

  • 1 lb lamb tenderloin, cut into 1/2 inch slices
  • 1 garlic clove, minced
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried sage
  • 2 teaspoons lemon juice
  • salt and pepper

Recipe

  • 1 spray large skillet with cooking spray; heat over medium heat until hot.
  • 2 add lamb and garlic and sprinkle with herbs; cook until lamb is browned and no longer pink in the center, 2-3 minutes per side.
  • 3 sprinkle with lemon juice. season with salt and pepper and serve.

Short Rib Flatbread With Clementine Gremolata

Total Time: 5 hrs Preparation Time: 30 mins Cook Time: 4 hrs 30 mins

Ingredients

  • 1 1/2 lbs beef short ribs
  • 1 tablespoon olive oil
  • 1 tablespoon salt
  • 1 tablespoon fresh ground black pepper
  • 1 teaspoon fresh thyme leave
  • 2 dried bay leaves
  • 1 teaspoon fresh rosemary
  • 1 medium onion, chopped into large chunks
  • 2 carrots, peeled, chopped into large chunks
  • 4 garlic cloves, skins removed, smashed
  • 2 tablespoons tomato paste
  • 1 cup chianti wine
  • 2 cups low sodium beef broth
  • 1 pillsbury refrigerated thin pizza crust
  • 1 teaspoon dried oregano
  • 1/2 lb cremini mushroom, sliced
  • 2 tablespoons laughing cow cheese, french onion
  • 1 tablespoon parmesan cheese, grated
  • 3 tablespoons italian parsley
  • 1 teaspoon fresh thyme
  • 1 tablespoon clementine zest
  • 1 teaspoon salt

Recipe

  • 1 add olive oil to cast iron skillet over medium-high heat. generously salt and pepper short ribs and sear in pan.
  • 2 add ribs and the remaining ‘rib’ ingredients to a slow cooker. make sure ribs are nestled down into the liquid. cook on low for 8 hours, or high for 3-4 hours. when ribs are cooked and falling off the bone, remove from slow cooker and let rest.
  • 3 preheat oven to 400 degrees. stretch and fit pizza dough into a baking sheet. brush with drippings from the slow cooker and season with oregano. bake until lightly golden brown, about 5 minutes.
  • 4 using the same cast iron skillet, brown mushrooms, season with salt and pepper and set aside.
  • 5 remove pre-cooked pizza crust from oven and spread with laughing cow cheese. layer mushrooms, onions (from slow cooker) and shredded short ribs on flatbread until completely covered, keeping ½ inch border on all sides. top with parmesan cheese. bake another 10 minutes, until cheese has melted.
  • 6 while your flatbread is baking, finely chop all gremolata ingredients together and set aside. top flatbread with gremolata and serve.

Mansion On Turtle Creek Mop Sauce

Ingredients

  • 1 (12 ounce) bock beer (shiner)
  • 2 teaspoons dijon mustard
  • 1 1/2 cups molasses
  • 1 teaspoon tabasco sauce
  • 1/2 cup balsamic vinegar
  • 1/2 cup cider vinegar
  • 1 teaspoon cracked black pepper
  • 1 tablespoon worcestershire sauce
  • 1 teaspoon sage (chopped)
  • 2 teaspoons chili powder
  • salt (to taste)

Recipe

  • 1 in medium bowl add all ingredients and stir to combine.
  • 2 brush over any item being grilled.
  • 3 or pan fry meat in this sauce added. do not cook at a high temperature as you don't want the sauce to burn.

Short Ribs With Mustard, Potatoes And Onions

Total Time: 1 hr 50 mins Preparation Time: 20 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 4
  • 3 lbs beef short ribs
  • 1 lb red potatoes or 1 lb potato, quartered and peeled (if you don't like skins)
  • 2 cups chopped onions
  • dry red wine
  • 2 tablespoons dijon mustard
  • 1 cup chicken stock or 1 cup vegetable stock or 1 cup water
  • salt and pepper

Recipe

  • 1 brown the short ribs in a dutch oven over medium heat (takes about 20 minutes) or use the oven, turning the ribs once, for 20 minutes at 500 f.
  • 2 remove ribs to a plate, reserving about 2 tablespoons of the fat in a large pot.
  • 3 add the onions to the fat and cook 10-15 minutes, or until onions have softened.
  • 4 add the stock or water, and a couple tablespoons of the wine (you can omit the wine totally, or add as much as you like).
  • 5 bring to a boil and place the ribs back into the pot, covered.
  • 6 add salt and pepper.
  • 7 if liquid looks low, add more wine and stock or water.
  • 8 cook for 30 minutes, stirring occasionally.
  • 9 add the potatoes, put the heat on low and simmer for about 30 more minutes, stirring occasionally.
  • 10 stew should be done when potatoes are soft.
  • 11 stir in the dijon mustard evenly, and enjoy with thick slices of bread and butter.

  • 1 green bell pepper, chopped
  • 1 medium onion, chopped

  • 1 (16 ounce) can black beans, i used 1 pint homecanned
  • 1 (16 ounce) can great northern beans, i used 1 pint homecanned
  • 5 bay leaves
  • 1 teaspoon dried parsley
  • 1 teaspoon ground cumin
  • 3 -4 dashes hot pepper sauce
  • hot cooked rice

Recipe

  • 1 in a large skillet, saute bell pepper, onion and garlic on oil until tender.
  • 2 add sausage, broth, beans and seasonings.
  • 3 cover and simmer for 1 hour, stirring occasionally.
  • 4 discard bay leaves.
  • 5 serve in bowls over rice.

"baked" Fried Chicken

  • 4 chicken breasts (or parts you like)
  • 1 teaspoon garlic salt
  • 1/2 cup mayonnaise (more if you need it)
  • 1 1/2 cups cracker crumbs

Recipe

  • 1 sprinkle chicken with garlic salt. coat with mayonnaise and roll in crumbs. bake at 300 for 1 1/2 to 2 hours.

Roast Beef Salad With Pesto Vinaigrette

Ingredients

  • Servings: 4
  • 1/4 cup pine nuts
  • 1/2 cup olive oil
  • 1 clove garlic, quartered
  • 1 cup lightly packed fresh basil leaf
  • 1 ounce parmesan cheese, freshly grated (1/3 c. do not use the stuff in the green can!)
  • 3/4 teaspoon salt
  • 1/4 cup red wine vinegar
  • 1/4 cup water
  • 1 lb rare roast beef, in julienne strips
  • 2 heads boston lettuce, cored,rinsed and dried
  • 8 leaves radicchio, rinsed and dried

Recipe

  • 1 heat the oven to 300°; put 2 t of the pine nuts in a pie pan and toast in the oven, stirring occasionally, for 8-10 minutes, set aside.
  • 2 combine the oil and garlic in a food processor and blend until the garlic is finely chopped; add the basil and the remaining 2 t of pine nuts, the cheese, and the salt, process until fairly smooth, stir in the vinegar and 1/4 c of water, set the pesto vinaigrette aside.

  • 1 heat olive oil in a heavy pot over high heat. sprinkle short ribs on both sides with salt and pepper. quickly sear both sides of the short ribs, using tongs to flip them halfway through. (just sear about 1 1/2 minutes per side.) remove the shortribs to a plate.
  • 2 pour wine and beef broth into the pot. add rosemary. stir to combine, scraping the bottom of the pot to deglaze. return the shortribs to the pot, reduce heat to low, then cover the pot and simmer it for 2 1/2 to 3 hours. (you can also put the pot into a 300 degree oven if you'd prefer not to simmer on the stovetop.).
