Rosemary-crusted Rack Of Lamb

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • 2/3 cup breadcrumbs
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh parsley
  • 1/4 cup salted butter, melted
  • 2 racks of lamb, trimmed
  • salt and pepper
  • 2 tablespoons dijon mustard, divided

Recipe

  • 1 preheat broiler.
  • 2 mix bread crumbs, rosemary, parsley and butter. set aside.
  • 3 season racks with salt and pepper. place in skillet, meat side up. interlock bones in center of pan. cover bones with foil.
  • 4 broil for 8-10 minutes.
  • 5 remove pan from oven.
  • 6 reduce heat to 325º.
  • 7 brush each rack with mustard. spread bread crumb mixture over both racks.
  • 8 roast in oven for 20-25 minutes
  • 9 remove from oven and let rest 3-5 minutes.
