Short Ribs Contadina

Total Time: 2 hrs 5 mins Preparation Time: 5 mins Cook Time: 2 hrs

Ingredients

  • Servings: 6
  • 2 tablespoons olive oil
  • 4 lbs beef short ribs
  • 1 onion, coarsely chopped
  • 1 (12 ounce) can tomato paste with italian spices
  • 2 2/3 cups water
  • 1/2 teaspoon salt
  • ground pepper
  • 2 carrots, peeled and cut into 2 inch pieces

Recipe

  • 1 heat oil in large saucepan over medium heat. add ribs; cook until browned on both sides.
  • 2 add onion and cook for 1 minute.
  • 3 combine tomato paste, water, salt and pepper in small bowl. pour over ribs; cover.
  • 4 simmer over low heat for 1 1/2 hours. add carrots; simmer, covered, for additional 30 minutes or until ribs are tender.
