Sausage And Beans

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • 1 green bell pepper, chopped
  • 1 medium onion, chopped
  • 1 garlic clove, minced
  • 1 tablespoon vegetable oil
  • 1/2 lb fully cooked sausage, cut into 1/4 inch slices
  • 4 cups chicken broth, i used a quart of homecanned
  • 1 (16 ounce) can black beans, i used 1 pint homecanned
  • 1 (16 ounce) can great northern beans, i used 1 pint homecanned
  • 5 bay leaves
  • 1 teaspoon dried parsley
  • 1 teaspoon ground cumin
  • 3 -4 dashes hot pepper sauce
  • hot cooked rice

Recipe

  • 1 in a large skillet, saute bell pepper, onion and garlic on oil until tender.
  • 2 add sausage, broth, beans and seasonings.
  • 3 cover and simmer for 1 hour, stirring occasionally.
  • 4 discard bay leaves.
  • 5 serve in bowls over rice.
