Simply Delicious Roasted Chicken

Total Time: 2 hrs 10 mins Preparation Time: 1 hr 30 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 1 teaspoon fresh ground pepper
  • 1 tablespoon salt
  • 1 lemon
  • 2 tablespoons butter, melted
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon rubbed sage
  • 1/4 teaspoon garlic powder
  • 1 dash paprika
  • 3 lbs chicken pieces, cut up, bone in, skin on (breasts, thighs, legs)

Recipe

  • 1 put chicken into zipper gallon bag ( you may need to split it into two bags) and add salt and pepper and lemon juice. once lemon is juiced throw that in too.
  • 2 close bag(s) and refrigerate for 1-2 hours. remove from refrigerator and allow to come to room temp before baking.
  • 3 preheat oven to 425 degrees f.
  • 4 spray large shallow baking sheet with cooking spray and arrange chicken so it is not crowded on the pan with skin side up.
  • 5 mix butter and oil. baste each piece of chicken in mixture. sprinkle with thyme, sage, garlic powder and paprika.
  • 6 bake in oven for 40 minute remove from oven and let sit, loosely covered with foil for 10 min before serving.
