Ingredients

- 1 1/4 cups chanterelle mushrooms
- 2 medium onions, minced
- 5 juniper berries, crushed
- butter, as needed for frying
- 1 2/3 cups heavy cream
- 1 lb reindeer roast, thinly sliced
- salt
- pepper
- 2 tablespoons chopped parsley
Recipe
- 1 brown the chanterelle mushrooms and onion with the juniper berries in butter.
- 2 add the cream, and cook until reduced by half. set aside.
- 3 in another skillet, brown the sliced reindeer in more butter. work in batches if needed, so the meat browns, not steams.
- 4 pour the sauce over the browned meat, and let simmer for a few minutes.
- 5 season to taste with salt and pepper.
- 6 sprinkle with parsley.
