Reindeer Stroganoff (renskavspanna

Ingredients

  • Servings: 4
  • 1 1/4 cups chanterelle mushrooms
  • 2 medium onions, minced
  • 5 juniper berries, crushed
  • butter, as needed for frying
  • 1 2/3 cups heavy cream
  • 1 lb reindeer roast, thinly sliced
  • salt
  • pepper
  • 2 tablespoons chopped parsley

Recipe

  • 1 brown the chanterelle mushrooms and onion with the juniper berries in butter.
  • 2 add the cream, and cook until reduced by half. set aside.
  • 3 in another skillet, brown the sliced reindeer in more butter. work in batches if needed, so the meat browns, not steams.
  • 4 pour the sauce over the browned meat, and let simmer for a few minutes.
  • 5 season to taste with salt and pepper.
  • 6 sprinkle with parsley.
