Scrumptious Chicken Meatloaf

Total Time: 1 hr 45 mins Preparation Time: 15 mins Cook Time: 1 hr 30 mins

Ingredients

  • 1 1/2 lbs ground chicken
  • 3/4 cup breadcrumbs (i used fine italian)
  • 1 egg (i used ener-g egg substitute)
  • 2 small carrots (chopped)
  • 6 green onions (chopped)
  • 1 teaspoon fresh sage
  • 1/4 cup ketchup
  • 1 large garlic clove (minced)
  • 1 1/2 teaspoons worcestershire sauce
  • 1/2 teaspoon celery seed
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon pepper

Recipe

  • 1 preheat oven to 350'f.
  • 2 combine the chicken and bread crumbs in a large bowl and set aside.
  • 3 cut up the carrots and green onions and add to the blender.
  • 4 add the rest of the ingredients from the sage to the pepper. blend until smooth.
  • 5 add this to the chicken breadcrumb mixture.
  • 6 combine with your hands.
  • 7 place in a buttered non stick 9x5x3" loaf pan.
  • 8 cover with tin foil and bake for 1 hour.
  • 9 then remove the foil and cook for an additional 30 minutes or until the loaf is cooked through.
  • 10 bon appetit!
