Roast Duck Legs With Red Wine Sauce

Total Time: 1 hr 25 mins Preparation Time: 10 mins Cook Time: 1 hr 15 mins

Ingredients

  • Servings: 4
  • 4 duck legs
  • 1 bunch rosemary
  • 4 large garlic cloves
  • 1 teaspoon five-spice powder
  • 1 1/2 cups red wine
  • 1 1/2 tablespoons red currant jelly, quince jelly could be subbed here

Recipe

  • 1 heat oven to 190 c.
  • 2 place duck legs in single layer in a roasting pan on a bed of rosemary sprigs and garlic cloves.
  • 3 sprinkle them with salt and five spice powder.
  • 4 roast for one hour.
  • 5 meanwhile place wine and jelly in a pot and simmer on a low heat.
  • 6 stir to dissolve jelly, simmer 5 minutes.
  • 7 spoon off almost all the fat from duck.
  • 8 pour wine mixture around duck.
  • 9 roast further 15 minutes until sauce reduces.
