Punched Potatoes

Ingredients

- 4 medium russet baking potatoes
- 3 tablespoons olive oil
- 4 teaspoons garlic, minced
- salt and pepper
- wine vinegar (optional)
Recipe
- 1 pre-heat the oven to 375.
- 2 bake the potatoes until soft (30 to 50 minutes, depending on the size).
- 3 slowly heat the oil.
- 4 remove from the heat and add the garlic.
- 5 allow steeping at least 10 minutes.
- 6 place the potato on a cutting board.
- 7 cover with a clean towel.
- 8 using a meat tenderizing mallet carefully punch the potato.
- 9 use a spatula to transfer to a plate.
- 10 pour the garlic oil and vinegar (if used) over the potato.
- 11 check the seasoning.
