Punched Potatoes

Total Time: 1 hr Preparation Time: 10 mins Cook Time: 50 mins

Ingredients

  • Servings: 4
  • 4 medium russet baking potatoes
  • 3 tablespoons olive oil
  • 4 teaspoons garlic, minced
  • salt and pepper
  • wine vinegar (optional)

Recipe

  • 1 pre-heat the oven to 375.
  • 2 bake the potatoes until soft (30 to 50 minutes, depending on the size).
  • 3 slowly heat the oil.
  • 4 remove from the heat and add the garlic.
  • 5 allow steeping at least 10 minutes.
  • 6 place the potato on a cutting board.
  • 7 cover with a clean towel.
  • 8 using a meat tenderizing mallet carefully punch the potato.
  • 9 use a spatula to transfer to a plate.
  • 10 pour the garlic oil and vinegar (if used) over the potato.
  • 11 check the seasoning.
