Persimmon Holiday Pie

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 8
  • 1 1/2 cups graham cracker crumbs
  • 3 tablespoons sugar
  • 1/2 cup melted margarine
  • 2 cups persimmon pulp
  • 3 eggs
  • 1 1/4 cups sugar
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1/2 cup melted butter
  • 2 1/2 cups milk
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1 cup walnut meat (optional)

Recipe

  • 1 mix first three ingredients and pat firmly in a pie pan.
  • 2 bake at 375 for 15 minutes or chill.
  • 3 mix persimmon pulp in a large bowl and beat in all other ingredients in order given.
  • 4 pour into graham cracker crust and bake in 325 oven for 1 hour or until firm.
  • 5 serve with whipped cream topped with chopped nuts if desired.
