Persimmon Date Pudding

Ingredients

  • Servings: 20
  • 1 cup persimmon pulp
  • 1 cup sugar
  • 1 egg
  • 2 tablespoons melted butter
  • 1 cup milk
  • 1 cup flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 cup raisins
  • 1/2 teaspoon salt
  • 1/4 cup chopped dates
  • 1/2 cup nutmeats, chopped
  • 1 cup brown sugar
  • 1 cup water
  • 2 tablespoons flour
  • 1 pinch salt

Recipe

  • 1 mix sugar, pulp, egg, butter and milk in a bowl.
  • 2 separately mix all dry ingredients.
  • 3 dust raisins and dates with flour so they won't sink to the bottom of the pan when baking.
  • 4 gradually add the pulp mixture into the flour mixture, added the floured dates and raisins last.
  • 5 pour into a 9x13 pan and bake in 325 oven for 45 to 60 minutes or until tester comes out clean in middle.
  • 6 for the sauce, combine all ingredients in a sauce pan and cook over low heat until thickened.
  • 7 serve over squares of pudding.
