Salsa-marinated Chicken

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 1/2 cups prepared salsa, good quality
  • 2 tablespoons tomato paste
  • 4 boneless skinless chicken breast halves
  • 1 green bell pepper, cut into thin strips
  • 2/3 cup frozen corn kernels, thawed
  • 3 tablespoons scallions, chopped finely
  • 2 tablespoons fresh lime juice
  • 2 tablespoons fresh cilantro or 2 tablespoons fresh parsley, chopped

Recipe

  • 1 preheat broiler or prepare grill.
  • 2 in a shallow bowl,combine 1/2 cup salsa and the tomato paste and stir until blended.
  • 3 add the chicken,turn to coat and let stand while you prepare the vegetable salsa.
  • 4 in a medium bowl,combine the remaining 1 cup salsa,the bell pepper,corn,scallion,lime juice and cilantro.
  • 5 broil or grill chicken 4 inches from the heat for about 4 minutes per side or until the chicken is cooked through.
  • 6 place the chicken on 4 plates,spoon the vegetable salsa on the side and serve.
