Jerk Marinade And Sauce

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 2 large onions
  • 2 stalks scallions
  • 2 sprigs thyme
  • 3 garlic cloves
  • 1/4 cup vegetable oil
  • 1/4 cup soy sauce
  • 1/2 cup beer
  • 1/4 cup vinegar
  • 6 whole scotch bonnet peppers
  • salt (optional)
  • 4 pimento seeds
  • 1 small piece ginger
  • add following ingredients for jerk sauce
  • 1/2 cup tomato paste
  • 1 cup pineapple juice

Recipe

  • 1 put all first 12 ingredients together in a blender.
  • 2 blend until all ingredients are smooth.
  • 3 leave marinade on your choice of meat over night.
  • 4 bake or grill your meat.
  • 5 to make jerk sauce - mix all the jerk marinade ingredients together with tomato paste & pineapple juice cooled.
  • 6 blend until all ingredients are smooth.
  • 7 put finished product into a pan and simmer for 10 - 15 minute.
