Ingredients

- 2 large onions
- 2 stalks scallions
- 2 sprigs thyme
- 3 garlic cloves
- 1/4 cup vegetable oil
- 1/4 cup soy sauce
- 1/2 cup beer
- 1/4 cup vinegar
- 6 whole scotch bonnet peppers
- salt (optional)
- 4 pimento seeds
- 1 small piece ginger
- add following ingredients for jerk sauce
- 1/2 cup tomato paste
- 1 cup pineapple juice
Recipe
- 1 put all first 12 ingredients together in a blender.
- 2 blend until all ingredients are smooth.
- 3 leave marinade on your choice of meat over night.
- 4 bake or grill your meat.
- 5 to make jerk sauce - mix all the jerk marinade ingredients together with tomato paste & pineapple juice cooled.
- 6 blend until all ingredients are smooth.
- 7 put finished product into a pan and simmer for 10 - 15 minute.
