Ingredients
- 1 cup vinegar
- 2 teaspoons sugar
- 2 bay leaves
- 5 -6 peppercorns
- 6 -8 cloves garlic
- 1/4 teaspoon allspice
- 1/4 cup flour
- 1 -2 lb beef chuck roast
- 3/4 tablespoon shortening
- 1/8 teaspoon salt
Recipe
- 1 wipe beef with a damp clothe.
- 2 place in a deep 10 inch container.
- 3 add vinegar and seasoning to beef, add enough water to cover.
- 4 place in refrigerator , covered, for 12-18 hours.
- 5 drain beef, reserving 1 cup of liquid.
- 6 mix flour with salt, sprinkle over beef.
- 7 heat shortening in heavy kettle or skillet.
- 8 add beef, cook until lightly browned on all sides.
- 9 turning, place rack under beef, add 1/2 cup of reserved liquid.
- 10 cover, cook over low heat for 3 hours or until tender.
- 11 add additional liquid if necessary.
- 12 prepare gravy, adding sugar to addltional flour.
