Roast Duck Ii

Total Time: 5 hrs Cook Time: 5 hrs

Ingredients

  • Servings: 1
  • 2 wild ducks
  • to taste orange, quartered
  • to taste celery, chopped
  • 3/4 cup cooking sherry
  • 3/4 cup orange juice

Recipe

  • 1 soak ducks in salt water all night. drain and rinse ducks.
  • 2 salt and pepper ducks inside and out. stuff them with oranges and celery.
  • 3 place ducks in roasting pan on a rack with water in the bottom.
  • 4 pour sherry and orange juice over ducks.
  • 5 roast 5 hours at 325 degrees.
