Ingredients

- 6 1/2 roast, boneless
- 2 large onions
- 1/2 cup brown sugar
- 1/3 cup soy sauce
- 1/3 cup cider vinegar
- 2 bay leaves
- 2 -3 garlic cloves, minced
- 1 teaspoon grated ginger
- 1 cup julienne cut carrot
- 2 cups sliced mushrooms
- 2 -3 cups fresh spinach leaves or 20 ounces frozen spinach, defrosted
- 2 tablespoons cornstarch
Recipe
- 1 1 place meat, topped with onions in slow cooker.
- 2 2 combine brown sugar, ginger, garlic, soy sauce and vinegar. pour over vinegar.
- 3 3 cover. cook on high 6-7 hours.
- 4 4 spread carrots, mushroom and spinach over beef.
- 5 5 cover. cook on high 20 minutes.
- 6 6 mix cornstarch with 1/2 cup broth from slow cooker.
- 7 7 cover. cook 10 minutes more.
- 8 8 serve over rice.
