Moose Ragout

Total Time: 3 hrs 20 mins Preparation Time: 20 mins Cook Time: 3 hrs

Ingredients

  • Servings: 6
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1 medium onion, sliced
  • 2 large fresh tomatoes, chopped
  • 2 garlic cloves, chopped
  • 1 1/2 cups celery, chopped
  • 2 lbs moose, cubed
  • 1 cup sliced mushrooms
  • 1 teaspoon paprika
  • 1/4 cup flour

Recipe

  • 1 saute onion and garlic in oil.
  • 2 add meat and paprika.
  • 3 cover and cook over medium heat until meat is brown.
  • 4 add tomatoes and celery.
  • 5 cover and simmer 1 hour.
  • 6 add mushrooms.
  • 7 cover and cook until meat is tender, about another hour.
  • 8 thicken liquid with flour and water paste.
  • 9 serve over polenta or cooked noodles.
