Smokin Turkey & Rice Salad

Ingredients

  • Servings: 6
  • 4 cups cooled cooked rice
  • 1 cup gouda cheese, shredded (smoked or plain)
  • 1 cup smoked turkey breast, chopped
  • 3 plum tomatoes, chopped
  • 1/2 medium onion, sliced
  • 1/2 cup reduced-fat ranch dressing
  • 1 tablespoon cilantro
  • salt
  • pepper

Recipe

  • 1 in a large bowl toss together the rice, gouda cheese, turkey breast, tomatoes and onion. in a small bowl mix the salad dressing and cilantro. pour over the rice mixture and season with salt and pepper to taste.
