Prime Rib Roast

Ingredients
- Servings: 4
- 2 lbs prime rib roast (bone in has more flavour)
- 2 tablespoons olive oil, plus more
- olive oil, for the baking dish if needed
- 5 garlic cloves, fresh minced (or pre-made jar kind will work too)
- pepper, to taste
- salt, to taste
Recipe
- 1 preheat oven to 400 degrees.
- 2 rub prime rib all over with olive oil, minced garlic, salt and pepper.
- 3 place in baking dish and let cook for 1 and 1/2hrs, (one hour for a more rare prime rib).
- 4 stand and cover with foil for 15 to 20mins to allow juices to flow back into the meat.
- 5 carve into fairly thick slices to serve.
