Pollo Con Salsa Chipotle (chicken With Chipotle Sauce)

Ingredients

- 6 chipotle chiles, seeds removed and soaked in water for 30 minutes
- 7/8 cup chicken stock
- 2 tablespoons oil
- 3 onions, sliced
- 6 boneless skinless chicken breasts
- sour cream, to serve
Recipe
- 1 preheat the oven to 350°f
- 2 place the soaked chilies in a blender. measure the soaking liquid in a jug and make up to 1 2/3 cups with the stock.
- 3 pour the liquid into the blender and process on high until smooth.
- 4 heat the oil in a frying pan, add the onions and cook for 5 minutes until soft.
- 5 place the onions in an ovenproof dish. add the chicken breasts and season with salt and freshly ground black pepper.
- 6 pour the chipotle puree over the chicken covering each piece and cook in the oven for 1 hour until the chicken is thoroughly cooked.
- 7 serve the chicken with soured cream, mexican rice and frijoles de olla.
