Santa Fe Chicken Rollups

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 4 boneless skinless chicken breast halves, cubed
  • 6 slices bacon
  • 1 green pepper
  • 1 red pepper
  • 1 medium onion, chopped
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 3 -4 tablespoons chopped parsley
  • 4 -6 flour tortillas

Recipe

  • 1 in a large skillet, cook bacon over medium high heat until crisp.
  • 2 drain on paper towel.
  • 3 discard all but 1 tbls bacon fat.
  • 4 rinse and seed peppers.
  • 5 cut into strips.
  • 6 in skillet with bacon fat, add onion and peppers.
  • 7 saute over medium heat for about 5 minutes.
  • 8 add chicken and spices.
  • 9 cook, stirring, for about 15 minutes or until chicken is cooked through.
  • 10 crumble bacon and sprinkle on top.
  • 11 sprinkle with chopped parsley, spoon into warm tortillas and serve immediately.
  • 12 note: these are also good if you add shredded cheddar cheese to the tortilla.
