Santa Fe Chicken Rollups

Ingredients
- Servings: 4
- 4 boneless skinless chicken breast halves, cubed
- 6 slices bacon
- 1 green pepper
- 1 red pepper
- 1 medium onion, chopped
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 3 -4 tablespoons chopped parsley
- 4 -6 flour tortillas
Recipe
- 1 in a large skillet, cook bacon over medium high heat until crisp.
- 2 drain on paper towel.
- 3 discard all but 1 tbls bacon fat.
- 4 rinse and seed peppers.
- 5 cut into strips.
- 6 in skillet with bacon fat, add onion and peppers.
- 7 saute over medium heat for about 5 minutes.
- 8 add chicken and spices.
- 9 cook, stirring, for about 15 minutes or until chicken is cooked through.
- 10 crumble bacon and sprinkle on top.
- 11 sprinkle with chopped parsley, spoon into warm tortillas and serve immediately.
- 12 note: these are also good if you add shredded cheddar cheese to the tortilla.
