Roasted Sausages, Peppers And Potatoes

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 lb italian sausage
  • 2 bell peppers, cut in 1-in . strips
  • 1 (20 ounce) bag red potatoes, wedges
  • 1 tablespoon olive oil
  • 1 teaspoon chopped garlic
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 cup pitted kalamata olive

Recipe

  • 1 position racks to divide oven into thirds.
  • 2 heat oven to 500ºf.
  • 3 you’ll need 2 large rimmed baking sheets lined with foil (for easy cleanup).
  • 4 divide sausages, peppers and potatoes between pans; toss with oil, garlic, salt and pepper.
  • 5 roast 10 minutes.
  • 6 toss; switch position of pans.
  • 7 roast 10 more minutes until sausages are cooked.
  • 8 cut sausages into slices; toss with potatoes, peppers and olives.
  • 9 sprinkle with parsley.
