Santa Fe Chicken

Ingredients
- Servings: 6
- 1 (15 1/2 ounce) can black beans, rinsed and drained
- 2 (10 ounce) packages frozen corn kernels, thawed
- 1 cup chunky salsa (your favorite brand, hot or mild)
- 2 lbs boneless skinless chicken breasts
- 3/4 cup shredded cheddar cheese
- 3/4 cup monterey jack cheese
- 1/4 cup chopped cilantro (for garnish)
Recipe
- 1 place chicken in bottom of the crockpot.
- 2 top chicken with black beans, corn, and salsa.
- 3 cover crockpot and cook on low for 5-6 hours or on high for 2 1/2-3 hours, or until chicken is cooked through; do not overcook.
- 4 lift chicken to the top of vegetables; top with cheese and cover crockpot until cheese melts, about 5 minutes.
- 5 serve chicken with corn/bean salsa and garnished with chopped cilantro.
