Santa Fe Casserole Bake

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 1 lb 93% lean ground beef
  • 1 (1 1/4 ounce) package taco seasoning mix
  • 2 cups low sodium chicken broth
  • 1/4 cup all-purpose flour
  • 1 cup low-fat sour cream
  • 2 (7 ounce) cans green chilies, diced
  • 1 (11 ounce) package corn tortilla chips
  • 2 cups grated monterey jack cheese or 2 cups cheddar cheese
  • 1 cup green onion, sliced

Recipe

  • 1 preheat over to 375 degrees.
  • 2 in medium skillet, brown meat till done.
  • 3 drain meat well then return to skillet.
  • 4 add taco seasoningand blend well.
  • 5 in a small bowl, combine broth and flour.
  • 6 add to meat mexture and bring to boil to slightly thicken liquid.
  • 7 stir in sour cream and chilies, blend well.
  • 8 lightly grease a 13 x 9 inch glass baking dish with cooking sprya.
  • 9 pour half of the bag of chips in the bottom and press down to flatten.
  • 10 top with half the meat mixture.
  • 11 next layer with half of the cheese.
  • 12 next layer half the onions.
  • 13 repeat layers ending with the onion.
  • 14 bake uncovered in the oven at 375 for 20 minutes.
  • 15 let stand 5 minutes before serving.
