Slow Cooker Fajita Stew

Total Time: 7 hrs 20 mins Preparation Time: 20 mins Cook Time: 7 hrs

Ingredients

  • 2 -2 1/2 lbs stew meat
  • 2 cups low fat low sodium beef broth
  • 1 onion, chopped
  • 1 cup frozen corn
  • 2 garlic cloves, minced
  • 14 ounces diced tomatoes, undrained
  • 1 ounce fajita seasoning mix or 1 ounce homemade fajita seasoning mix
  • 1 tablespoon fresh lime juice
  • 1 splash tabasco sauce (optional)
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1/4 fresh cilantro, roughly chopped
  • 1/2 cup low-fat sour cream (optional)
  • 1/2 cup shredded mexican blend cheese (optional)
  • tortilla chips (optional)

Recipe

  • 1 combine stew meat with onion, beef broth and corn in a 3-4 quart slow cooker.
  • 2 mix together fajita seasoning mix (either purchased or your own homemade)with the garlic, lime juice, hot sauce (if using) and undrained tomatoes and pour over beef.
  • 3 place peppers on top. cover crockpot and cook on low for 7-9 hours until beef is tender.
  • 4 dish into bowls and garnish with cilantro on top, or stir in chopped cilantro just before serving.
  • 5 serve with tortilla chips and dollops of sour cream with a sprinkle of cheese.
