Paleo Breakfast Meatza

Ingredients
- 1 lb bulk breakfast sausage
- 7 eggs
- 8 slices bacon, diced
- 1/2 sweet potato, diced small
- 1/2 yellow onion, diced
- 1 teaspoon garlic, minced
Recipe
- 1 preheat oven to 350.
- 2 mix breakfast sausage and one egg by hand in a bowl. place in 8x8 pan or pie plate.
- 3 cook meat mixture in oven 8-10 minutes. pour off excess fat.
- 4 while the meat is cooking,cut up bacon and cook over medium heat until crisp. remove bacon to paper towel. pour off all but 2 tbl bacon grease.
- 5 add garlic, sweet potato, and onion to pan. cook for 8-10 minutes.
- 6 scramble 6 eggs in a bowl.
- 7 layer potato mixture over sausage.
- 8 pour eggs over potato mixture.
- 9 spread bacon bits over eggs.
- 10 bake 8-10 minutes, until eggs are set.
