Smoked Rannoch Ham And Mango Salad

Ingredients

  • Servings: 2
  • 100 g smoked rannoch ham
  • 1 large mango, removed from stone and cut into strips
  • 125 g mozzarella cheese, cut into strips
  • handful basil leaves
  • 3 tablespoons olive oil
  • 1 teaspoon honey
  • 2 tablespoons lemon juice

Recipe

  • 1 whisk together the olive oil, honey and lemon juice to make a dressing.
  • 2 combine the mango, mozzarella and basil leaves in a large bowl.
  • 3 divide the salad between two bowls, top with the prosciutto slices and serve with the dressing.
