Slow Cooker Chipotle Shredded Beef (gooseberry Patch)

Ingredients

- 2 1/2 lbs beef chuck roast, trimmed
- 14 ounces diced tomatoes
- 7 ounces chipotle hot sauce (the original listed it as "chipotle sauce" and kraft makes one)
- 4 ounces diced green chilies
- 1 onion, chopped
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 2 cups beef broth
- salt and pepper
- 8 (6 inch) corn tortillas, warmed
- shredded cheddar cheese, for serving
- shredded lettuce, for serving
- sliced black olives, for serving
- chopped tomato, for serving
Recipe
- 1 place roast in a slow cooker.
- 2 top with remaining ingredients except tortillas and items listed for serving.
- 3 cover and cook on low setting for 8 to 10 hours.
- 4 with 2 forks, shred roast in slow cooker; stir well.
- 5 spoon into warmed tortillas; add desired garnishes.
