Rosemary Dijon Chicken

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 tablespoon vegetable oil
  • 4 boneless skinless chicken breasts
  • 1 cup orange juice (fresh squeezed if you can get it)
  • 2 tablespoons dijon mustard
  • 1 teaspoon dried rosemary, crushed
  • salt and pepper

Recipe

  • 1 heat oil in a nonstick skillet over medium high heat.
  • 2 add chicken breasts and brown on both sides, about 3-5 minutes per side.
  • 3 mix orange juice, mustard and rosemary.
  • 4 pour over chicken.
  • 5 simmer another 10 minutes, turning chicken occasionally.
  • 6 remove chicken to serving dish and turn heat to high. boil sauce to reduce 1 or 2 minutes until it is thick enough to coat the back of a spoon, and pour over chicken.
