Rosemary Dijon Chicken

Ingredients

- 1 tablespoon vegetable oil
- 4 boneless skinless chicken breasts
- 1 cup orange juice (fresh squeezed if you can get it)
- 2 tablespoons dijon mustard
- 1 teaspoon dried rosemary, crushed
- salt and pepper
Recipe
- 1 heat oil in a nonstick skillet over medium high heat.
- 2 add chicken breasts and brown on both sides, about 3-5 minutes per side.
- 3 mix orange juice, mustard and rosemary.
- 4 pour over chicken.
- 5 simmer another 10 minutes, turning chicken occasionally.
- 6 remove chicken to serving dish and turn heat to high. boil sauce to reduce 1 or 2 minutes until it is thick enough to coat the back of a spoon, and pour over chicken.
