Pot-roasted Turkey, Jamaica Style

Total Time: 2 hrs 50 mins Preparation Time: 20 mins Cook Time: 2 hrs 30 mins

Ingredients

  • Servings: 8
  • 1/4 cup butter
  • 1 (6 lb) turkey
  • 1 1/2 cups chicken broth
  • 3/4 cup sliced celery
  • 1 medium onion, chopped
  • 1/2 teaspoon garlic salt
  • 2 dried red peppers, crushed
  • 1 tablespoon vinegar
  • 1/4 teaspoon ground allspice
  • 1/2 cup sliced green olives
  • 1 medium green pepper, sliced
  • 2 tablespoons cornstarch
  • 1/4 cup water

Recipe

  • 1 heat butter in a large skillet or dutch oven.
  • 2 brown turkey on all sides, about 20 minutes. remove.
  • 3 place a rack in dutch oven.
  • 4 place turkey on rack.
  • 5 add broth, celery, onion, garlic salt, red peppers, vinegar and allspice.
  • 6 cover and simmer for 2-2 1/2 hours, or until turkey is tender.
  • 7 add olives and green pepper and simmer for 10 minutes more.
  • 8 remove turkey and place on serving platter.
  • 9 combine cornstarch and water and mix well.
  • 10 add to liquid in pan and heat until slightly thickened.
  • 11 serve over turkey.
