Pot-roasted Turkey, Jamaica Style

Ingredients

- 1/4 cup butter
- 1 (6 lb) turkey
- 1 1/2 cups chicken broth
- 3/4 cup sliced celery
- 1 medium onion, chopped
- 1/2 teaspoon garlic salt
- 2 dried red peppers, crushed
- 1 tablespoon vinegar
- 1/4 teaspoon ground allspice
- 1/2 cup sliced green olives
- 1 medium green pepper, sliced
- 2 tablespoons cornstarch
- 1/4 cup water
Recipe
- 1 heat butter in a large skillet or dutch oven.
- 2 brown turkey on all sides, about 20 minutes. remove.
- 3 place a rack in dutch oven.
- 4 place turkey on rack.
- 5 add broth, celery, onion, garlic salt, red peppers, vinegar and allspice.
- 6 cover and simmer for 2-2 1/2 hours, or until turkey is tender.
- 7 add olives and green pepper and simmer for 10 minutes more.
- 8 remove turkey and place on serving platter.
- 9 combine cornstarch and water and mix well.
- 10 add to liquid in pan and heat until slightly thickened.
- 11 serve over turkey.
