Slow Cooker Chipotle Shredded Beef (gooseberry Patch)

Ingredients

  • Servings: 6
  • 2 1/2 lbs beef chuck roast, trimmed
  • 14 ounces diced tomatoes
  • 7 ounces chipotle hot sauce (the original listed it as "chipotle sauce" and kraft makes one)
  • 4 ounces diced green chilies
  • 1 onion, chopped
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 2 cups beef broth
  • salt and pepper
  • 8 (6 inch) corn tortillas, warmed
  • shredded cheddar cheese, for serving
  • shredded lettuce, for serving
  • sliced black olives, for serving
  • chopped tomato, for serving

Recipe

  • 1 place roast in a slow cooker.
  • 2 top with remaining ingredients except tortillas and items listed for serving.
  • 3 cover and cook on low setting for 8 to 10 hours.
  • 4 with 2 forks, shred roast in slow cooker; stir well.
  • 5 spoon into warmed tortillas; add desired garnishes.
