Pollo Borracho (drunken Chicken)

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1/2 onion, minced
  • 4 garlic cloves, minced
  • 2 tablespoons butter
  • 1/3 lb ham, diced
  • 4 chicken breast halves, boned and skinned
  • 1/2 teaspoon cumin seed
  • 1/2 teaspoon dried sage
  • 2 cups dry wine
  • 1 cup chicken stock
  • 2 tablespoons butter
  • 1 tablespoon flour

Recipe

  • 1 sautã© onion and garlic in butter until onion is soft.
  • 2 butter a heavy casserole large enough to hold all ingredients.
  • 3 place half the ham in the bottom, chicken breasts on top, then remaining ham. sprinkle with cumin and sage, add sautã©ed onion and garlic.
  • 4 add wine and stock to cover the chicken.
  • 5 cover the casserole and bake at 325° for 30 minutes, or until chicken is done.
  • 6 remove chicken and ham from the casserole to a deep warmed platter.
  • 7 reduce sauce over high heat, add flour to thicken slightly.
  • 8 pour sauce over chicken and ham. serve.
