Pollo Borracho (drunken Chicken)

Ingredients
- Servings: 4
- 1/2 onion, minced
- 4 garlic cloves, minced
- 2 tablespoons butter
- 1/3 lb ham, diced
- 4 chicken breast halves, boned and skinned
- 1/2 teaspoon cumin seed
- 1/2 teaspoon dried sage
- 2 cups dry wine
- 1 cup chicken stock
- 2 tablespoons butter
- 1 tablespoon flour
Recipe
- 1 sautã© onion and garlic in butter until onion is soft.
- 2 butter a heavy casserole large enough to hold all ingredients.
- 3 place half the ham in the bottom, chicken breasts on top, then remaining ham. sprinkle with cumin and sage, add sautã©ed onion and garlic.
- 4 add wine and stock to cover the chicken.
- 5 cover the casserole and bake at 325° for 30 minutes, or until chicken is done.
- 6 remove chicken and ham from the casserole to a deep warmed platter.
- 7 reduce sauce over high heat, add flour to thicken slightly.
- 8 pour sauce over chicken and ham. serve.
