Luna's Stacked Red Enchiladas

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • 10 corn tortillas
  • 5 cups red enchilada sauce
  • 5 ounces sharp cheddar cheese (grated)
  • 1 spanish onion (chopped or grated)
  • 2 eggs

Recipe

  • 1 fry tortillas one at a time in hot oil. fry them until they are firm but not crisp.
  • 2 put tortilla on plate, cover with 1/4 to 1/2 cup of sauce.
  • 3 sprinkle with onion and cheese. add meat if desired.
  • 4 repeat steps until desired amount of layers are complete.
  • 5 put completed enchildada in oven for 5 to 10 minutes.
  • 6 top with basted egg.
