Luna's Stacked Red Enchiladas

Ingredients
- 10 corn tortillas
- 5 cups red enchilada sauce
- 5 ounces sharp cheddar cheese (grated)
- 1 spanish onion (chopped or grated)
- 2 eggs
Recipe
- 1 fry tortillas one at a time in hot oil. fry them until they are firm but not crisp.
- 2 put tortilla on plate, cover with 1/4 to 1/2 cup of sauce.
- 3 sprinkle with onion and cheese. add meat if desired.
- 4 repeat steps until desired amount of layers are complete.
- 5 put completed enchildada in oven for 5 to 10 minutes.
- 6 top with basted egg.
