Honey And Thyme-brined Turkey Breast

Ingredients

  • Servings: 12
  • 7 cups water, divided
  • 3 tablespoons fresh ground black pepper, divided
  • 6 fresh thyme sprigs
  • 1/2 cup kosher salt
  • 1/2 cup honey
  • 1/4 cup packed brown sugar
  • 2 cups ice cubes
  • 1 (6 lb) bone-in skinless turkey breast
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh thyme

Recipe

  • 1 in a small saucepan, combine 1 cup water, 2 tablespoons pepper, and 6 thyme sprigs; bring to a boil then remove from heat.
  • 2 pour mixture into a large bowl; cool to room temperature.
