Sauerbraten

Total Time: 13 hrs 48 mins Preparation Time: 10 hrs 48 mins Cook Time: 3 hrs

Ingredients

  • 1 cup vinegar
  • 2 teaspoons sugar
  • 2 bay leaves
  • 5 -6 peppercorns
  • 6 -8 cloves garlic
  • 1/4 teaspoon allspice
  • 1/4 cup flour
  • 1 -2 lb beef chuck roast
  • 3/4 tablespoon shortening
  • 1/8 teaspoon salt

Recipe

  • 1 wipe beef with a damp clothe.
  • 2 place in a deep 10 inch container.
  • 3 add vinegar and seasoning to beef, add enough water to cover.
  • 4 place in refrigerator , covered, for 12-18 hours.
  • 5 drain beef, reserving 1 cup of liquid.
  • 6 mix flour with salt, sprinkle over beef.
  • 7 heat shortening in heavy kettle or skillet.
  • 8 add beef, cook until lightly browned on all sides.
  • 9 turning, place rack under beef, add 1/2 cup of reserved liquid.
  • 10 cover, cook over low heat for 3 hours or until tender.
  • 11 add additional liquid if necessary.
  • 12 prepare gravy, adding sugar to addltional flour.
